As far as commercial games are concerned, my vote would probably go to Prince Of Persia 1. It has better graphics, sound, and music than the game it's based on (be it PC or Macintosh version), and offers all sorts of delights and surprises even to people who've won other versions of the game for the PC, Macintosh, NES, or Genesis.

For home-grown games, there's a strategy-action game called "Rockfall". It's one of the highest-quality Boulderdash clones you'll ever see for any game console or home computer. Period.
