I can't speak specifically to RetroArch, but it's pretty easy to use Wii remotes with Dolphin (I have experience with Dolphin on Windows). They're Bluetooth, so as long as your system can connect that way, Dolphin should be able to handle it. Even the pointer will work as long as you have 2 infrared lights.
