Mario Sunshine and Wii Sports are among the many E3 kiosk demos that have yet to be found in the wild. There's no guarantee that they even still exist. If you want to find anything like that, you should be looking at rare auctions and talking to former Nintendo employees, not asking around here..

I request any of the E3 Gamecube and DS kiosk demo games that are not available (Mario Sunshine, Wii Sports. etc.)
