A lot of modern iOS "jailbreaks" do not offer root access (and thereby properly remove the software limitations), and I wouldn't consider those to be jailbreaks in the traditional sense. I think checkra1n was the last proper jailbreak to grant root access, but I'm not an Apple user so I might be wrong.
for security reasons jailbreaks never remove Apple’s limitations, they simply allow tweaks to bypass them
