roms running too fast (especially NES) - why?

Why do so many NES roms run faster than their console counterparts? The music most often runs faster, and an octave higher, which irritates me. Not all NES roms are like this. Do you know the reason for this and, if possible, how to avoid it? I mostly use the NesterJ and RockNES emulators.
