You're not really missing out on anything except for a smoother experience. As far as I'm aware though, if you want the highest framerates and textures, the Xbox or PC versions are the best, as the GameCube has compressed textures (due to having half the disc size) and the PS2 running slower.

Personally, I recommend the PC version due to it having a pretty decent modding community.

Never knew that. Maybe I'm missing out replaying it on PS2. I only ever played it on PS2 & Xbox. I have an xbox I want to setup with homebrew but Idk where to get the stuff for it or roms for xbox, but I know it was better on xbox than ps2, at least.
