It looks like there isn't any compatibility data yet for NASCAR 2005 on PCSX2. You should start a thread in the PCSX2 forum with your experience to give the devs information about your issues.
I'm using PCSX2 on Windows 11, my emulator is on v1.7.5550 and here are the specs.
