The "AI" part of SAI definitely stands for Anti-aliasing, but the "S" part I'm not 100% clear on. I thought the S stood for "Super" until the phrase "Super 2XSAI" came out. :-/
And like I said, "Super 2XSAI" often makes things look better, but it has some serious flaws. It'll make many shapes look 100% better, but with many ROMs, it distorts the game's shapes rather instead of smoothing them out. It's exceptionally weird when Super 2XSAI succeeds with some images and fails with others on the same exact screen. :-O

I personally go for the most authentic approach. I go with my monitor's natural resolution and don't stretch it to fit plus I don't use any of the fancy graphics modes leaving the graphics a little blocky, just like on a real SNES. Super 2XSAI and those other things will smooth out the edges which often making games look nicer (think anti-aliasing), but it's just not the same.
