Many 360 digital games are demos and full releases at the same time, the software looks for a license file at runtime and will display as a demo if that license file is not found.
If you're on real hardware, use something like XM360 to unlock the game:

the minecraft xbox 360 rom, when i extract it with xbox img browser, it is only a demo???
