It's a known issue:

You can download the patch mentioned in that discussion, or you can wait until the fix is merged into the main release of PCSX2 and just update your emulator then.
When trying to run the game 'Nickelodeon Jimmy Neutron: Boy Genius - Attack of the Twonkies' on PCSX2, it will load up the menu and play the opening cutscene, but then it won't load past that. It just stays on the loading screen.
