Well, you don't need to worry about that, since the Yuzu and Ryujinx emulators have up-to-date forks maintained by the community.

2) Are you interested in emulating Super Smash Bros. Ultimate?
Don't worry about that either, since existing forks can easily emulate this video game, including all the DLC.
3) Can these games be played after they're discontinued?
Yes, since emulators exist so that future generations can play games from the past.
Oh, and I have another question for you. Why does your title mention PlayStation and Xbox, even though your post is entirely about Nintendo Switch emulation?
Is there any way that we can have already made emulators that does Switch games and DLC out of print so that players can access Super Smash Bros. Ultimate with every DLC in its final updated version such as Sora from Kingdom Hearts?
