My favorite SNES 4-player game was always Super Bomberman 2.
You might not be interested in NES games, but I shelled out $30 for the NES Satellite in the early '90s just to have 4-player Nintendo World Cup. It's the only soccer game i've enjoyed and with four players it's ridiculous. RC Pro-AM 2 would probably be good as well.
I'm looking over a list of Super Multitap games and I'm not seeing many options for the SNES. If you like free-wheeling basketball games, NBA JAM T.E. is a blast and supports 4 players. The Peace Keepers with four players sounds intriguing, reminiscent of the old multiplayer arcade beat 'em ups like Final Fight. Secrets of Mana is hard enough with getting 2 players to move cooperatively together, so I imagine 3 would be pretty irritating.
Since I believe the N64 had 4 controller ports, there should be alot more games that support 3-4 players. The obvious choices would be GoldenEye 007 and Mario Kart 64. Super Smash Bros series and Perfect Dark are good too.
