Thanks for the advise again Dhaos, but could I trouble you for a link. I don't trust downloading from the internet unless I know a safe site. Especially when it's on my mom's laptop instead of mine. Thanks again

I have read that ePSXe 1.7 has a bug that prevents it from swapping discs. It should work fine if you use an older version, 1.6 or 1.52. Getting a different CDROM plugin, like Mooby's, might also work.
