Just to follow up: since the A button is the jump button, there isn't any simultaneous button-mashing. Also, I procured a Microsoft Sidewinder game pad today, and just now tested it on Super Mario Bros. Pressing the A button jumps (as expected). Keeping it mashed still does nothing. I suspect either UberNES has a problem, or the instruction manual has an error. The latter wouldn't surprise me because UberNES works great in every other respect! It's a minor issue so I'm sticking with UberNES.
On another note, the game pad's ease of use and responsiveness allows for precision moves that a computer keyboard simply can't hold a candle to. If you're using a keyboard, consider getting a game pad!
